Easy Berry Blender Pikelets

These Berry Blender Pikelets are so quick and easy, they're sweet and delicious, perfect for an afternoon snack or the lunchbox and the kids will love them!!

Ingredients:
1 Pear or Apple (cored and cut into chunks but not peeled)
80 grams Berries (straweberries, raspberries, blueberries, fresh or frozen)
2 Eggs
1 teaspoon Vanilla Essence
30 grams Raw Sugar
200 grams Plain Flour
2 teaspoons Baking Powder
200 grams Milk (dairy free alternatives work fine)

Method:
1. Add the fruit and berries to the blender and blitz on high speed until there are no big chunks.
2. Scrape down the sides.
3. Add in all the rest of the ingredients into the blender, you can give it a little stir.
4. Blitz on medium speed until all combined.
5. Add oil of your choice to a pan over a medium heat.
6. Add a tablespoon on batter to the pan for each pikelet. Flip once you see bubbles forming and then cook until browned.

My boys enjoy these with maple syrup, fresh berries and coconut yoghurt!!
